We are seeking an experienced and knowledgeable Senior Sommelier to deliver exceptional wine and beverage experiences at CLAP Dubai. The ideal candidate will have a strong passion for wine, extensive knowledge of international wines and sake, and the ability to provide expert recommendations while maintaining the highest standards of luxury hospitality. The Senior Sommelier will play a key role in driving beverage sales, maintaining the wine programme, and developing the knowledge and capabilities of the wider service team.

Key Responsibilities

Guest Experience & Wine Service

  • Deliver exceptional wine and sake service while creating memorable dining experiences for every guest.
  • Assist guests with wine and sake selections and provide knowledgeable, personalized recommendations.
  • Recommend wine, sake, and beverage pairings that complement CLAP's Japanese cuisine and overall dining experience.
  • Serve wines and sake in accordance with established Standard Operating Procedures and luxury hospitality standards.
  • Maintain a friendly, courteous, professional, and engaging approach throughout the guest experience.

Wine Programme & Cellar Management

  • Manage and maintain the wine cellar, ensuring proper storage, stock rotation, organization, and inventory control.
  • Ensure wine and sake lists are accurate and up to date, including vintages, availability, and pricing.
  • Ensure all wines and sake are stored and served at the correct temperature.
  • Maintain appropriate mise-en-place and stock levels before each service.
  • Monitor and maintain all wine and beverage glassware, ensuring it is clean, polished, and in excellent condition.
  • Use glassware, equipment, and other resources responsibly to help control operating costs.

Sales & Revenue Generation

  • Drive beverage sales through confident upselling and personalized recommendations.
  • Demonstrate professional salesmanship and positive sales techniques at all times.
  • Identify opportunities to enhance the guest experience through premium wine, sake, and beverage recommendations.

Support the restaurant in achieving beverage revenue and sales targets.

Team Training & Collaboration

  • Train and mentor the service team on wine knowledge, sake, food and wine pairings, and service standards.
  • Build team confidence in presenting and recommending wines and sake to guests.
  • Share knowledge and provide guidance to the wider team during service.

Requirements

  • Minimum of 3 years' experience as a Sommelier or 1 year as a Senior Sommelier in a luxury lifestyle dining concept, premium restaurant, Michelin-starred venue, or five-star hotel.
  • WSET Level 2 or Level 3 certification, or an equivalent internationally recognized sommelier qualification, is highly desirable.
  • Strong knowledge of Old World and New World wines, Champagne, premium spirits, sake, and food pairing.
  • Proven experience managing an extensive wine list and working with premium international clientele.
  • Strong ability to recommend food and wine/sake pairings confidently and appropriately.
  • Proven ability to increase beverage revenue through effective recommendations and upselling.
  • Excellent English communication skills, both written and spoken.
  • Excellent communication, presentation, listening, organizational, and time-management skills.
  • Ability to work effectively in a fast-paced, high-volume, multicultural environment.
  • High degree of flexibility and the ability to remain composed under pressure.
  • Demonstrated integrity, professionalism, and confidentiality in all dealings.
  • Ability to work long shifts and remain standing for extended periods.
  • A genuine passion for wine, hospitality, and creating exceptional guest experiences.
