Job Summary:
The Commis 1 – Pastry is responsible for assisting in the preparation and production of
pastry and bakery items under the supervision of senior pastry chefs. This role requires
precision, attention to detail, and a strong interest in pastry arts, contributing to the smooth
and creative operation of the pastry kitchen.
Key Responsibilities:
- Assist in preparing pastry components such as sponge cakes, mousses, tart bases,
glazes, icings, and fillings.
- Follow recipes, portion sizes, and presentation standards as directed by the Pastry
CDP or Sous Chef.
- Help with the production of breads, viennoiserie, plated desserts, and decorative
elements.
- Maintain a clean and organized workstation in accordance with food safety and
hygiene standards (HACCP). Assist with daily mise en place and ensure all items are
properly labelled and stored.

Operate pastry equipment (mixers, ovens, sheeters, etc.) safely and correctly.

Monitor ingredient levels and report shortages or spoilage.

Support and cooperate with all sections of the pastry kitchen during service.
