- Oversee and manage daily kitchen operations in the Chinese kitchen, ensuring high standards of food safety, hygiene, and sanitation (HACCP).
- Collaborate with the Executive Chef to develop, create, and standardize recipes, presentation styles, and food costs for Chinese menus.
- Monitor the quality, taste, and freshness of all Chinese ingredients to meet hotel standards.
- Manage inventory, place orders, and minimize food waste to control kitchen costs.
- Train, mentor, and evaluate the performance of kitchen staff (Cooks and Commis).
- Schedule shifts and maintain overall cleanliness and order within the kitchen premises.
