The Commis I – Butcher supports the butchery section in preparing high-quality meat, poultry and seafood to five-star standards for all hotel outlets, banquets and in-room dining. Key duties include receiving and inspecting deliveries, then breaking down, trimming, portioning, marinating and preparing products to the specifications and requisitions of each kitchen. The Commis I – Butcher ensures accurate portion control to minimise waste, labels and stores all products correctly with proper stock rotation, and keeps temperatures within safe limits. The role requires strict compliance with food hygiene and safety standards (HACCP), safe use and care of knives and butchery equipment, a clean and organised work area, and support for the Chef de Partie or Sous Chef in daily production while guiding junior commis when needed.
