Job Summary

The Restaurant Manager is responsible for the overall success of the restaurant by ensuring exceptional guest experiences, driving sales, maintaining operational excellence, managing profitability, and developing a high-performing team. The role requires strong leadership, attention to detail, and the ability to uphold Breakin' Brew's unique brand standards while achieving business goals.

Key Responsibilities

1. Operations Management

  • Oversee all daily restaurant operations.
  • Ensure smooth opening, shift management, and closing procedures.
  • Maintain exceptional cleanliness, hygiene, and food safety standards.
  • Ensure all SOPs are implemented consistently.
  • Monitor service quality and guest satisfaction throughout every shift.
  • Ensure restaurant ambience, music, lighting, and overall guest experience meet brand standards.

2. Team Leadership

  • Recruit, interview, and onboard restaurant staff.
  • Prepare staff schedules based on business requirements.
  • Conduct daily pre-shift briefings.
  • Train and coach employees on service standards and product knowledge.
  • Conduct regular performance reviews.
  • Build a positive, accountable, and motivated work culture.
  • Resolve employee concerns professionally.
  • Manage attendance, punctuality, discipline, and productivity.

3. Guest Experience

  • Personally interact with guests during service.
  • Handle guest complaints promptly and professionally.
  • Ensure every guest receives exceptional hospitality.
  • Monitor online reviews and work towards maintaining high ratings.
  • Create memorable guest experiences that encourage repeat business.

4. Financial Management

  • Achieve monthly sales and profitability targets.
  • Monitor daily sales reports.
  • Control food cost and beverage cost.
  • Manage labour cost within budget.
  • Reduce wastage and operational losses.
  • Ensure proper cash handling and daily reconciliation.
  • Prepare daily, weekly, and monthly business reports.

5. Inventory & Procurement

  • Monitor inventory levels.
  • Ensure timely ordering of food, beverages, and operational supplies.
  • Conduct weekly and monthly stock audits.
  • Prevent stock pilferage and wastage.
  • Ensure proper storage practices.

6. Food Quality & Safety

  • Ensure all food is served according to brand standards.
  • Maintain FSSAI and hygiene compliance.
  • Conduct daily quality inspections.
  • Monitor kitchen cleanliness and food handling practices.
  • Ensure equipment is maintained properly.

7. Sales & Marketing

  • Drive local store marketing initiatives.
  • Execute promotional campaigns.
  • Encourage upselling and cross-selling.
  • Build relationships with nearby businesses and communities.
  • Support social media and event activations.
  • Increase repeat customer visits and loyalty.

8. Administration

  • Maintain outlet documentation.
  • Ensure compliance with labour laws and company policies.
  • Submit daily operational reports.
  • Maintain maintenance logs.
  • Coordinate with vendors and support departments.

Qualifications

  • Bachelor's degree preferred.
  • Hospitality Management qualification is an advantage.

Experience

  • 3–7 years of restaurant management experience.
  • Experience managing casual dining, premium cafés, bars, or themed restaurants preferred.
  • Strong leadership and people management experience.
  • Experience handling P&L is preferred.
